Sweet Potato Brownies


  • Sweet Potato

  • Almond Butter

  • Maple Syrup

  • Dates (3-4)

  • Cocoa Powder


  1. Soften 4-5 large sweet potatoes. Remove skin once cooked (TIP: to avoid burning of hand transfer cooked potatoes into large bowl with cold water. This will make it a lot easier to remove skin when still hot)

  2. In mixing bowl combine all other ingredients to taste using no more than 4 dates. the sweetness will come from the dates and maple syrup so keep in mind.

  3. Once sweet potatoes are peeled combine all ingredients together for a last taste testing. When satisfied, pour batter into oil baked pan. Oil pan with coconut oil

  4. Cook for 25-30 minutes at 350 degrees

  5. Let Cool & Enjoy this Yummy Treat!!

  6. Optional: Drizzle melted dark chocolate on top of the cooled brownies
